(Filled with Dulce de leche) 

Ingredients

14 tbsp. butter (room temperature)

¾ cups powdered sugar

3 egg yolks

1 ½ cup cornstarch

1 cup flour

½ tsp baking soda

2 tsp baking powder

1 tsp vanilla extract

1 tsp lemon zest

1 cup dry coconut flakes

Preheat oven at 350F.

Mix the butter and sugar until it have a creamy texture (cremage). Add the egg yolks, one at a time.  Add the vanilla extract and the lemon zest.

Mix the rest dry ingredients (flour, corntarch, bakin soda and baking powder). Sift the dry ingredients into the butter mixture in three steps, mixing each time.

Sift some cornstarch on the counter. Using a rolling pin, flat the dough evenly 2 in. thick. Cut little cicles with a cookie cutter. 

Place on a baking tray and bake in the oven for 15 min.

Cool down. Put two cookies together with Dulce de Leche filling. Spread Dulce de Leche around each alfajor and decorate with the coconut flakes.
