La Nonna's Orange Blossom Honey - 8.5oz.
from Bazar del Miele
- Extracted with a centrifuge, rather than heat
- complex with the barest hint of orange flower & wonderful added to salad dressings or used in baking
- can be eaten simply by itself
- Product of Italy
- Produced in Trapani, Sicily
Honey is an incredibly romantic, nearly magical product of nature, particularly if the beekeeper is an old Sicilian gentleman named Salvatore Vultaggio. When he was a child his father taught him the art of collecting honey and how to talk softly to the bees while working. This seems to keep the bees calmer while he is in their midst. La Nonna's honey is extracted with a centrifuge, rather than heat, which is the way common supermarket honeys are extracted. Heat extraction is quicker and less expensive and makes the honey smooth and clear, but it also destroys some of the delicate and distinctive flavors, as well as the beneficial amino acids and enzymes. Raw, virgin honey like La Nonna will naturally crystallize over time. One can almost picture Salvatore carefully placing his hives amongst the fragrant orange trees in full blossom, the bees buzzing about him, as he murmurs to them softly, assuring them that the nectar they find in this orange grove will be sweet and fit for their queen. Orange blossom honey is common in the US, but when you taste this honey you won't believe it's the same thing at all. It's complex with the barest hint of orange flower and wonderful added to salad dressings, used in baking, or simply eaten.

Master beekeeper Giuseppe Follino has perfected the art of having his bees in the right place at the right time. Just as other blossoms begin to open, he removes the beehives to another location.
