James Aldridge started his cheese business in the early 80s picking up cheese from local farmhouses in Wales for his cheese shop. To save on transport costs, James decided that in order to pick up larger amounts of cheese, he would have to start aging it on his own. He now ages his cheese at Glynhynod Farm, Dyfed. Like his award winning Celtic Promise, James uses cheese from a small farmhouse. In this case, he takes Ducketts Farmhouse Caerphilly and marinates it in herbs, brine, and wine from Kent, England. This semi hard cheese is aged for 10 weeks, with a spicy flavor, ideal as a table cheese served with a good wine, or, of course a good ale. Suitable for vegetarians.

Although Caerphilly was originally a Welsh cheese, this Caerphilly is made in Somerset, England. Caerphilly production moved to England in the early twentieth century when demand for the cheese had far outstripped the Welsh supply. The Duckett Family Farm in Wedmore, Somerset England is now praised for producing one of the finest Caerphilly cheeses available for export. Chris Duckett still makes the cheese according to the recipe his family used over a century ago. It is a mild cheese with a delicious creamy or buttery flavor. The cheese is softer and moister than many of the other well-known British cheeses, such as Cheshire, Lancashire or Wensleydale. It has a natural gray rind and a beige to yellow interior that is slightly oozy toward the center. This cheese dries out fairly quickly, so do not order it more than a week in advance of when you plan to eat it. This is suitable for vegetarians.
