Woodear mushrooms (Auricularia Polytricha) are cultivated all over the world but grown for the commercial dry market almost exclusively in China. They are thought to look like ears growing out of trees, hence the name. This mushroom has other names such as "Tree Ear" and "Black Fungus". It is often confused with the cloud ear mushroom. Woodear Mushrooms are believed by many to be good for the heart. When reconstituted, the brownish tan inner color blends with the black exterior color to create a brownish-black mushroom. The Woodear has a firm skin with a slightly crunchy texture and an earthy flavor. Shredded Woodear Mushrooms are thin, long slices of the whole Woodear Mushroom.

These are not as pungent or flavorful as the fresh kind, however, at a much more accessible price, they do allow you to experiment with truffle recipes. Summer truffles will not be very striking out of the jar, or have much aroma or flavor if used raw. Rather, you need to coax the flavors out, and they will need to be heated up or cooked with to bring out the flavors. Best for used in hot dishes like risottos, omelettes and mashed potatoes. The heat of the dish itself will help bring out the aromas. Directions for use: slice thinly and lightly sautée with truffle butter or oil to further enhance flavor and aroma.
