The taste of the morel makes it the most sought after funghi following only the truffle. Essence made from dried morels is rivaled only by the porcini. Morels are often paired with cream or white wine sauces and veal or chicken. They also work well with grilled meats. Dried morels provide much more intense flavor than fresh ones. Morel Mushrooms (Morchella Elata) are honeycomb-capped mushrooms that are the delight of the northern woods. Morel Mushrooms have a wonderful buttery, woodsy flavor that is delicious with beef, game, poultry and seafood. Typically, Morels range from 3/4 of an inch to 4 inches in height. Morels have a cream-colored base and a dark cap. Typically found in the Pacific Northwest, Morels inspire an early spring pilgrimage in a quest for this rare and delicious treat. Although there are many beliefs, it is commonly believed that these mushrooms arrive within 20 days after the first spring frost. Hunters of the Morel Mushroom rarely reveal their harvesting locations. Furthermore, if the location of the wild mushroom is not picked clean, the mushrooms will return the following spring.

A wild edible mushroom whose cone-shape cap has a honeycombed appearance. The cap ranges from two to four inches tall and the mushrooms stem is hollow.
